Avocado Fries

Today, we had 3 avocados that were in their PRIME. Meaning, we needed to eat them, pronto. If you’re familiar with the life cycle of an avocado… they live for days in the unripe stage… then one morning, they’re ripe. By afternoon they’re spoiled! This is really stressful, guys. So make these avocado fries, STAT!

I use my air fryer for this recipe, but DON’T WORRY if you don’t have one. Although they’re pretty fun to use and are especially great in the summer when you want to cook something but don’t want to heat up the house, an oven or toaster oven will also work out fine.

This is what you need to make this recipe:

  1. A ripe avocado
  2. Panko bread crumbs (if they’re seasoned, you don’t need salt. If they’re plain add salt.)
  3. Oil of your choice (you can omit this if you’re trying to lower your calories.)
  4. An air fryer, oven, or toaster oven.

Now, you can get fancy and use flour, eggs, chili powder, etc., but I wanted to keep this recipe simple, because I know all you people out there are strapped for time and just want something easy and delicious.

I will give other options and additions if you want to level up and have some extra time on your hands. But for now, let’s stick with the basics.

Preheat

Preheat your air fryer or oven to 350 degrees Fahrenheit.

Prepare

Then, you can cut your avocado into wedges.

If you’re unsure of how to do this, read my step-by-step guide to cutting an avocado>>.

Next, place your panko bread crumbs into a bowl, and then press the avocado into the panko bread crumbs.

**Note: if your avocado is a little under-ripe, the panko may not stick very well. I have not yet had this problem because I always make sure to use a ripe avocado for this recipe. You can crack an egg into a bowl, whisk it, and then dip the avocado into this egg-wash first. This will help your panko to stick.

Your avocado will look something like this:

You can dip it in more panko if you like more than this, really pressing it in.

Then, place all the fries into your air fryer, or on a baking sheet.

I like to spray mine with a little avocado oil. I have avocado oil spray, but you can use an oil mister and it will have the same effect.

Bake

Bake in the air fryer, 3 minutes on each side or in the oven for 10-12 minutes, flipping halfway.

You will know it is done when it stars to turn a golden brown.

Optional additions:

  • Use half panko half parmesan cheese (1/4 cup of each)
  • For added breading and crispiness, dip the avocado in egg wash (whisked raw egg in a bowl), then in flour, then in the egg wash again, then in the panko.
  • Add a few shakes of garlic salt, onion powder, and paprika to your panko or your flour. If you like spicy, try some chili flakes.
  • Dip it in cilantro-lime aioli.

Ingredients

  • 1 ripe avocado cut into wedges
  • 1/2 cup panko bread crumbs **add 1/2 tsp salt unless panko is seasoned
  • 1 tsp avocado oil

Instructions

  • Preheat air fryer or oven to 350 degrees Fahrenheit
  • Place panko in a shallow bowl, dip each avocado wedge into panko, pressing down gently to make sure it sticks.
  • Place the avocado wedges in the air fryer basket, leaving space so they do not touch one another. If you're using an oven, place on a baking sheet (w/ parchment paper for easy cleanup).
  • Spray each piece evenly with a little avocado oil
  • Place the air fryer basket back into the air fryer, cooking for about 6 minutes total, flipping halfway through. Spray with avocado oil on the other side. If using an oven, it will take a little longer, 10-12 minutes total. Make sure to flip it halfway and spray the other side with oil.
  • Remove from air fryer or oven. Let cool for a few minutes before enjoying!

Notes

Optional Additions for MAXIMUM yumminess:
  • Use half panko half parmesan cheese
  • For added breading and crispiness, dip the avocado in egg wash (whisked raw egg in a bowl), then in a shallow bowl with flour, then in the egg wash again, then in the panko.
  • Add a few shakes of garlic salt, onion powder, and paprika to your panko or your flour. If you like spicy, try some chili flakes.
